What’s the Red Radish Color?
Radish red is a natural food coloring derived from red-shelled radishes that are grown locally and have a long history of cultivation. The extraction process includes inspection, washing, slicing, extraction, filtration, purification, concentration, sterilization, spraying, and drying.
The primary pigment found in radish-red powder is anthocyanin, which contains geranium. This powder has a dark red color, while the liquid form appears brownish purple. It can be dissolved in water and alcohol solutions, but it is not soluble in oil. Additionally, the powder does not have the ability to absorb moisture or solidify.
The color of the solution changes depending on its pH value. In the range of pH 1-8, the color transitions from orange-red to red-purple, purple-red, and finally blue. The red region represents ideal stability when the pH is between 1-6. However, when the pH goes above 7, the solution turns blue and becomes unstable. In an acidic medium, the color of the solution does not fade under light for a prolonged period and also exhibits excellent resistance to high temperatures.
