In ice cream production, adding just 0.05% flaxseed gum significantly improves texture and quality. It boosts overrun to over 95%, delivering a delicate, smooth, and odor-free taste. It also minimizes the formation of coarse ice crystals, keeping the frozen product soft, creamy, and stable.
When 25% flaxseed gum is used in a composite jelly powder formula with 0.8% total jelly powder, the resulting jelly shows optimal gel strength, elasticity, clarity, and water retention. The texture is smooth and pleasant, offering the best overall taste and mouthfeel.
